Ok picture a small bar with a small stage. Whats in your opinion the best way to record a fiddle, flute and bouzouki?

I'd say you could do a lot worse that a portable DAT recorder at 44.1kHz 16 bit and a quality capacitor stereo mic.

Oh, woops, i should re word that question. I ment for live sound reinforcment, not recording it. (duh me)
